Would we be able to cut shrink plastic with ease on this machine do you think?

Hard to say without testing it, sorry. The problem with plastic is the density of it, wood is a lot softer than plastic, so once you get over 125 micron thick, plastic can become hard to get through.

If you would like me to test cut some for you I would be happy to do so.
